Overnight Oats

Happy 2015 lovely readers! Hope you’ve all had amazing breaks and are feeling as excited as I am about the obligatory January spring clean. Like the majority of my office, London and, no doubt, the world, this year it’s all about eating clean and training dirty for me! In an attempt to get back on track, this January I’m completely eliminating dairy and wheat (this time by choice rather than doctors orders!) so it’s sure to be a great month on the blog. First up, breakfast!

 

INGREDIENTS

– 1/3 cup rolled oats

– 1/2 cup almond milk

– 2 dates, each chopped into 3 pieces.

– 1 banana, chopped

– 1 heaving tsp of peanut butter

 

METHOD (simple, simple, simple!)

1. Place 1/3 cup of oats into an empty jar or bowl and cover with 1/3 cup milk. Add the chopped dates and leave to soak and sweeten overnight.

2. In the morning, add the chopped banana and a drizzle of peanut butter. Naturally, these toppings are to taste- I’ve also had it with cinnamon and cooked apples which is delicious if you’re an apple pie kinda guy!

3. Enjoy!

 

Note: I eat this straight from the jar at my desk after my workout (about two hours after I leave home) and, surprisingly, it travels very well!
