Oat Crust Pizza

Nothing says Friday night like Pizza- but when you can’t have wheat or dairy this can be a bit of a challenge. I’ve adapted this from a couple of recipes and it’s gotta be one of the healthiest pizza’s out there! In fact, as delicious as L’s version looked, I didn’t feel like I was missing out at all!

FOR THE TOMATO SAUCE (makes lots!)

– 1 large onion, diced.

– 2 cloves of garlic, chopped.

– 2 carrots, chopped.

– 2 sticks of celery, chopped.

– 400g chopped tomatoes

– 1 cup of water

– 1 cup oats

– 2 eggs

– 1 tbsp olive oil

– 1 tbsp flax seeds

– 1/4 cup water

1. Heat 2 tbsp of olive oil in a pan and add onion and garlic. Cook until soft.

2. Add carrots and celery and cook for about 15 minutes until soft.

3. Add tomatoes and a pinch of salt, cook for an additional 10 minutes.

4. Whiz with hand blender adding water until desired consistency.

1. Heat over to 180 degrees.

2. Mix all ingredients together and leave to stand for 5 minutes.

3. Flatten mixture in a 9-inch cake tin and place into a hot oven for 20 minutes.

4. Add sauce and toppings of choice (I added sweetcorn and 3 tbsp nutritional yeast as a cheese substitute)

5. Place back in the oven and base for another 20 minutes.

6. Top with spinach and a drizzle of balsamic and then tuck in!

    • Hi there 🙂 Flax seeds are actually optional and they are there more for the health benefits and texture than holding the base together. As long as you put the olive oil and egg in you shouldn’t have any problems. I haven’t yet got round to trying any other add-ins in the base but I would imagine chia seeds would work just as well, or maybe a bit of dried basil? You’ll have to let me know if you try anything!
