Banana Bread

Today L and I had pyjama Sunday. As if I hadn’t done enough baking recently (I’m going to blame it on these Grad Scheme applications!), I decided to use up my over ripe bananas today with this clean loaf of banana bread.


– 3 ripe bananas, mashed

– 1/4 cup olive oil

– 1/4 cup brown rice syrup

– 2 eggs

– 1 tsp of vanilla extract

– 1/2 cup almond milk

– 2 cups rice flour

– 1 tsp baking soda

– 1 tsp baking powder

– 1/2 tsp cinnamon


1. Preheat oven to 160 degrees.

2. With a hand mixer, beat together banana, oil, syrup, eggs, vanilla, and milk until creamy

3. In a separate bowl, sift flour, baking soda, baking powder, and cinnamon. Gradually add dry mixture to wet ingredients, beating well.

4. Pour batter into a greased loaf pan and spread evenly. Bake for 45 minutes or until a toothpick inserted comes out clean.
